Organ Meat Recipes



ORGAN MEAT RECIPES


Hamburgers

1 lbs ground beef or bison liver, kidney and heart
2-3 lbs ground beef or bison
1 onion pureed or finely chopped
1 green bell pepper pureed or finely chopped
1 tbsp Sea Salt
3 cloves crushed raw garlic or 3 tbsp garlic powder
1 Tbsp Raw Apple Cider Vinegar
6 tbsp soy sauce
2 tbsp coconut flour

Mix all listed ingredients together, making sure to thoroughly mix the two types of meat into a smooth consistency. Form into patties and grill or pan-cook to desired temperature. Serve on gluten-free or spouted grain buns with mustard and vegenaise, see homemade ketchup recipe below.

Soy Sauce and Ginger Hamburgers

1.25 lbs ground beef or bison liver, kidney and heart
2-3 lbs ground beef or bison
1.5-2 inches fresh ground ginger or 3 Tbsp ginger powder
1 tbsp Sea Salt
3 cloves crushed raw garlic or 3 tbsp garlic powder
1 Tbsp Raw Apple Cider Vinegar
6 tbsp soy sauce
2 tbsp coconut flour

Mix all listed ingredients together, making sure to thoroughly mix the two types of meat into a smooth consistency. Form into patties and grill or pan-cook to desired temperature. Serve on gluten-free or spouted grain buns with mustard and vegenaise, see homemade ketchup recipe below.

Meatloaf

1lbs ground beef or bison liver, kidney and heart
1.25 bs ground beef or bison
5 tbsp Italian Seasoning
1 tbsp Mustard Powder
1 can tomato paste
½ finely diced onion
½ finely diced green bell pepper
2Tbsp Raw Apple Cider Vinegar
1 tbsp coconut flour
1 tbsp blackstrap molasses

Bake at 375 degrees for 60 minutes and then drizzle tomato sauce mix over the top and bake for another 15 minutes.

Meatloaf with Bacon and Cheese

Prepare meatloaf as above but divide meatloaf mix in half and mold the first half into the meatloaf pan and then layer with bacon or turkey bacon and slices of goat cheese. Gently push the second half of the meatloaf mix in over the top of the bacon and cheese center. Bake as above at 350 degrees.

Meatballs and Spaghetti (or meatball sandwiches)

Meatballs
1lbs ground beef or bison liver, kidney and heart
1.25 lbs ground beef or bison
5 tbsp Italian Seasoning
1 tbsp Mustard Powder
3Tbsp Raw Apple Cider Vinegar
1 tbsp coconut flour
½ finely diced onion
½ finely diced green bell pepper

Mix all meatball ingredients well, making sure the organ and muscle meats are thoroughly mixed. Form the meatballs into small or medium balls and brown them for around 2 minutes on each side. Place browned meatballs on an oven tray and bake on 350 degrees for 25 minutes.

Cook the desired about of spelt or brown rice pasta and mix desired number of meatballs, spaghetti sauce and noodles in serving dish. Garnish with shredded goat cheese.

Ground beef and organ meat enchiladas

1lbs ground beef or bison liver, kidney and heart
1.25 lbs ground beef or bison
8 tbsp chili powder
4 tbsp onion powder
4 tbsp garlic powder
1 tbsp sea salt
½ cup water

3 Jars organic green salsa (verde)
1 pound shredded white cheddar goats cheese
1 package organic corn tortillas

Chopped lettuce and tomato (optional)

First mix all of the ground meats and spices together until consistency is uniform and organ meats are evenly mixed in. Brown “hamburger meat” and add ½ cup water to let simmer. Do NOT drain fat.

Layer corn tortillas in bottom of 11” by 15” pan. Pour in and spread cooked hamburger meat, add salsa saving one jar for the top, cheese (saving 1 cup for the top). Layer with another layer of tortillas and then salsa and cheese. Bake for 20 minutes at 350 degrees or until cheese is melted.

Serve with chipotle “sour cream” and guacamole if desired over a bed of lettuce and chopped tomato.

Chipotle “Sour Cream”

½ cup Goats milk plain yogurt
1 tsp Sea Salt
1 tsp Chipotle Pepper Powder

Mix all ingredients until smooth. Add salt and chipotle powder to taste. A dash of chili powder or cayenne can give it some extra spiciness if desired.

Beef and Organ Meat Tacos

Prepare taco meat as above in Enchiladas Recipe. Serve with desired fixings and chipotle “sour cream” in soft shell tacos – hard are good too if they are baked and not fried.

Organ Meat and Bean Chili

1lbs ground beef or bison liver, kidney and heart
1.25 lbs ground beef or bison
4 tbsp onion powder
4 tbsp garlic powder
1 tbsp sea salt

1 cup kidney beans soaked overnight
¾ cup pinto beans soaked overnight

1 chopped onion
1 chopped green bell pepper
1 – 28 ounce can diced tomatoes
1 – 15 ounce can tomato sauce
1 – 15 ounce can water
4 tbsp chili powder
3 tbsp cumin

First mix all of the ground meats and spices together until consistency is uniform and organ meats are evenly mixed in. Brown “hamburger meat” in sunflower oil or coconut oil and do NOT drain fat. Mix all ingredients in crockpot and cook for 9-10 hours on low heat or overnight. Serve with goat’s chedder.

Note: I typically pull out about ¾ cup of the cooked hamburger /organ meat for my 22 month old daughter because she does not like spicy foods.

Organ Meat Lasagna

1lbs ground beef or bison liver, kidney and heart
1.25 lbs ground beef or bison
4 tbsp onion powder
4 tbsp garlic powder
1 tbsp sea salt

Quinoa or brown rice lasagna noodles
Shredded cheddar cheese to taste
Soft goat’s chevre cheese
Organic and sugar-free marinara or spaghetti sauce

First mix all of the ground meats and spices together until consistency is uniform and organ meats are evenly mixed in. Brown “hamburger meat” in sunflower oil or coconut oil and do NOT drain fat. Layer lasagna noodles with sauce, meat and cheese in 11” by 15” glass baking dish with the cheddar cheese as garnish on the very top layer. Bake according to lasagna noodle instructions. Or if noodles are pre-cooked, bake at 350 degrees for 30 minutes.
